Chocolate Boston Cream Pie Cupcakes

Cupcakes may come in many flavors, but chocolate is still a real favorite. Slowly beat in the flour mixture followed by the buttermilk with the mixer on low speed. Give the bowl one more scrape, all the way to the bottom, to make sure there are no patches of flour or butter. I am a big fan of Sour Cream Chocolate Cake and love that I was able to incorporate it into cupcakes.



I've tried countless cupcakes over the years, but this is my top favorite recipe. To get enough of that rich chocolate flavor I added both melted chocolate and cocoa powder. Probably will be my go-to choc cupcake recipe. This chocolate cupcake recipe yields 12 cupcakes which equates to one 9-inch round cake layer.

In a separate bowl, whisk together the buttermilk, sour cream, and coffee. I wanted to know can I substitute dark chocolate instead of using cocoa powder. Dutch-process cocoa powder has been neutralized of its acid, so it was only the sour cream and small amount of brown sugar.

We used vegan chocolate chips for the cupcake pictured below. Remove from oven and let cool in the pan for 5 minutes, then remove from pan and let cool on a rack. This recipe only makes 14-16 cupcakes which is the same as one square baking dish or 9-inch round cake layer.

One of my favorite cupcakes is simply the classic chocolate cupcake with vanilla bean icing. But when I'm making frosting for taste, rather than for looks, I prefer a whipped chocolate ganache (recipe below) for chocolate and my cooked flour vanilla frosting for vanilla.

These were hands-down the BEST chocolate cupcakes I have ever tasted, let alone baked myself. In a medium sized bowl, sift the cocoa powder, flour, baking soda, baking powder, and salt together until thoroughly combined. I find that chocolate cupcakes are rarely flavorful or moist enough for my liking….until I came upon this recipe.
